Dave Cannon opened Just Subs in Hillsborough in 1997 with a straightforward idea: make good subs and take care of the community. Originally from Edison, Dave has made Hillsborough his home, and he’s still behind the counter alongside his crew. That hands-on approach has shaped everything about the place.

You’ll find Dave coordinating with the local high school baseball teams for away games, making sure there’s a cooler of pre-ordered subs ready for the players. He supports fundraisers for local schools as well as many other teams and clubs from the town. He’s trained employees who’ve gone on to open their own Just Subs locations. He works alongside his wife Adrienne and a team that includes young staff who are learning the business the same way he runs it, with care and consistency.

The shop itself is unpretentious. People come back for decades because the food is good and the staff remembers them. Some customers started coming as teenagers and now bring their own kids. Dave kept the menu simple at first, then expanded it over the years based on what people asked for. If you’re watching carbs, they’ll make your sub as a salad. If you’re feeding a team or a party, they’ll handle it with the same attention they give a single order.

What Dave built isn’t about bells and whistles. It’s about showing up, doing the work well, and being part of Hillsborough’s daily rhythm. That’s what has kept people coming back since he opened the doors.
